I am in a single screen config. WOuld like to hide the “Start a Meeting”, “Join a Meeting”, “Phone”, “Whitebboard” , “Share COntent” Buttons. Is this possible? EIther through the API or through config?

No, it’s not possible to customize the Zoom Room Controller on any of the versions (iPad, Android, Windows tablet).
